  • This recipe is a great example that healthy food can be both incredibly delicious and affordable. These burritos are so good that we enjoy them ourselves several times a month. On top of being delicious and packed with nutrition, you can prepare these Quinoa Bean and Cheese Burritos quickly.If you like having great tasting healthy food even faster, you can make several of these burritos up in advance and freeze them for lunches or dinners at a later time. Since our children are grown and on their own now we freeze the ones we don’t eat and simply warm them up for about 20 minutes when we want to enjoy a delicious and nutritious meal.

    These burritos are so good and the ingredients so affordable that they can easily fit into anyone’s meal budget. If you don’t have pinto beans on hand, feel free to use other types of beans as well. All of the varieties of beans that we have tried so far have worked well with this recipe and can add a hint of freshness to the recipe over time.

    You just can’t go wrong feeding your family great tasting food that also keeps them healthy. We would love to know if you add this to your regular meal rotation as we have done in our own household.

    Ingredients

    8 Flour Tortillas
    1 cup cooked Quinoa
    2 cups cooked beans (any kind)
    2 cup salsa
    2 cups cheddar cheese

    Directions

    Preheat at350 °

    Mix Quinoa, beans, 1/2 cup salsa and 1/2 cup cheddar cheese in bowl.
    Roll enough mixture in a tortilla, freeze or Place in a greased baking dish top with 2 tablespoons of salsa and 2 tablespoons cheese.
    Bake for 15 minutes.
    makes about 8 Burritos.
