You may even want to characterize this delicious casserole as healthy comfort food. It is a satisfying complete meal with good nutritional value and low fat benefits.
Many are finding this to be an ideal recipe to share with friends and family who also may be looking for great tasting meal choices that promote good health. This chicken and rice casserole is very easy to make and can be scaled to serve as many or few guests as needed.
1 1/2 tsp Salt
1/8 tsp Pepper
1 Cup Nonfat chicken broth
1 1/2 Cups Skim milk
1 1/2 Cups Cooked Rice (White or Wild)
2 Cups Chicken breasts without skin (cooked)
4 Ounces Mushrooms
1/3 Cup Chopped green bell pepper.
Here are the directions to prepare this delicious low fat chicken and rice casserole.
First, heat the oven to 350 degrees F. In a large saucepan blend flour, salt and pepper. Then stir in broth and milk. You will want to keep stirring constantly while cooking over low heat, until the mixture is smooth and bubbly.
When it comes to a boil stir for one more minute. Then simply stir in the remaining ingredients.
When finished, pour it into an NON-greased baking dish (10x6x1.5″), or a 1 1/2-quart casserole dish. Either will work perfectly.
Bake it uncovered for 40 to 45 minutes. Before serving you may want to sprinkle it with a little parsley.
This recipe is with a serving size of 4 so if you are inviting more the 3 guests over for chicken, you will need to multiply the ingredients needed so there will be enough for everyone.
