Vegan Cowboy Hash

Cowboy hash has been a long time favorite of our family over the years and especially enjoyed by our chhildren. The home is filled with such wonderful aroma while it is cooking from all of the flavors the blend together so perfectly that you will anticipate each delicious bite when it is served at the table.

This Vegan Cowboy Hash recipe is fantastic in that it has all of the wonderful taste of traditional cowboy hash but replaces the meat with delicious veggie ingredients. It is a hardy and satisfying meal that is packed with good nutrition at the same time.


2 Tlbs. grape seed oil
1 large onion chopped
2 minced garlic cloves
4 large potatoes cubed
4 oz. chopped green chilies
1 cup edenome
1 tsp. salt
1/2 tsp. pepper
1/2 cup vegetable broth


Heat oil in a large skillet add onion ,garlic ,salt and pepper cook on mediumĀ  until tender. add potatoes and vegetable broth cook uncovered for 20 minutes stir occasionally. Then add chillies and edenome cook until heated through.

It is now ready to serve and be enjoyed by all.
