1 pie shell, store-bought or home baked
1 1/2 cups sugar
1/3 cup cornstarch
2 cups whole strawberries
2 cups cut-up rhubarb
1 1/2 tablespoons butter
Pre-heat oven to 425 degrees F.
Mix sugar and cornstarch; mix lightly through berries and rhubarb.
Pour into pastry lined pan; dot with butter.
Cover with top crust; cut slits in crust. Sprinkle with sugar.
Seal and flute edges; cover edge with 1-1/2 inch strip of foil to prevent excessive browning.
Bake in 425 degree F oven for 40 to 50 minutes or until crust is nicely browned and juice begins to bubble through slits. Serve slightly warm.

2 cups rhubarb (diced)
3 cups apple pie filling
1 package strawberry gelatin mix
1 cup sugar
1 teaspoon cinnamon
1 pkg white cake mix
3 cups mini marshmallows
Pre-heat oven to 350 degrees F.
Mix the fruit together and put in the bottom of 9 x 11 inch glass cake/baking pan.
Mix the gelatin, sugar, and cinnamon.
Pour over the fruit, cover with the marshmallows, then pour the cake mix on top of everything.
Bake in a 350 degrees F oven for 45 to 50 minutes.
Cool to room temperature and then refrigerate until ready to serve.
Garnish as desired.

Add lemon juice and rhubarb. Cook until rhubarb is tender but not falling apart.
